It was on December of 1989 when a hobby of
Ella turned to be the creation of pastel. She used to bake this bread for her
great grandmother. Pastel then is a soft dough coffee bread. It was the Spaniards
who transferred the knowledge to locals' ancestors on how to make pastel as part of
the delicacy among Camiguignons. By the way, pastel is cake in Spanish word. It
is usually made as a common treat in the tables of the influential people of Camiguin
particularly during the special events or gatherings such as weddings,
birthdays, fiestas, Christmas, and the like. It was on January 8, 1990 when
Eleonor Popera Jose first commercialized this bread. The initial capital of
P120, a fraction of what was left from her husband’s Christmas bonus, had created 3 dozens of the said bread and doubled the following day. This simple
hobby of Ms. Ella had made it more profitable and seen its big potential.
Originally, Pastel has “yema” (custard) as
its filling. Ms. Ella never stopped innovating the flavours of her product. Hence, she
broadened her knowledge about baking by attending culinary classes or
workshops. At present, Vjandep Pastel of Camiguin has more than 15 variants to choose from. Many may wonder what VjANDEP means. It actually comes from the initial of the couple’s names- Virgilio Jose AND Eleonor Popera.
But it is promounded with a silent “j.”
